Quick answers

How long are leftovers good in the fridge?

Most cooked leftovers are safe for 3–4 days in a fridge at 40°F (4°C) or below. Freeze them within that window if you will not eat them in time.

How long can food sit out at room temperature?

No more than 2 hours, or 1 hour if it is above 90°F (32°C). Bacteria grow fastest between 40°F and 140°F (4°C–60°C).

Can I tell if food is safe by smelling it?

No. Spoilage bacteria cause bad smells, but the bacteria that cause food poisoning usually do not change how food looks, smells or tastes.
